Deep-fried Walleyes

Ingredients
​

       4 walleye fillets
       2 eggs
       1/2 cup all-purpose flour
       1/2 teaspoon garlic powder
       1 pinch salt (optional)
       1/2 teaspoon ground black pepper 
       2 cups crushed saltine crackers
       vegetable oil
      1 lemon, cut into wedges

Crack the two eggs into a bowl and mix. In a separate bowl, mix the flour, garlic powder, salt and pepper. Place the saltine cracker crumbs into a third bowl. Heat vegetable oil in a cast-iron skillet or a deep-fryer up at or set to 375 degrees. (Vegetable oil in the cast-iron skillet should be 1 inch deep. Use medium-high heat.) Dredge the fillets with the flour mixture. Then, soak fillets in the egg mixture. Finally, coat the fillets in the cracker crumbs. Test the oil with cracker crumbs—the crumbs will crackle and pop when the oil is at the right temperature. Gently place two fillets into hot oil. Cook until fillets are browned and crispy on each side and flake with a fork on the inside. Place cooked fillets on a paper towel-lined plate. Repeat with the remaining fillets. Serve with fresh lemon wedges for a zesty flavor.
