Here is a simple and great tasting recipe that you can share with your friends and family this summer!
Seasoned Fish Cakes
1 cup of leftover fish (or cook a few pieces in the microwave)
1/2 cup mashed potatoes
1/2 chopped onion
Garlic salt to taste
Cajun seasoning (to suit your taste)
Mix fish, potatoes and onion with some garlic salt and Cajun seasoning. Shape into patties, roll in cornmeal.
For the grill: Cook until bottoms of the cakes are seared and firm.
For the skillet: Fry in skillet with butter until golden brown.
