· 4 med speckled trout fillets (about 2 lbs. total). Cut into ½-inch chunks · ¾ cup fresh Key lime juice · ½ red onion, diced · ½ red bell pepper, diced · 1 jalapeno, seeded and minced · 1 avocado, diced · 1 mango, diced · ¼ cup coarsely chopped fresh cilantro leaves · 2 tablespoons agave nectar · Sea salt to taste
PREPARATION Place the fish chunks into a bowl, pouring the lime juice over the chunks, and mixing softly with your hands (do not use mixing utensils). Cover the top of bowl to let the juices soak in, and allow for the chunks to become firm for 2 to 3 hours in the refrigerator.
Continue by taking the marinated lime fish chunks from the refrigerator and add the remaining ingredients, mixing them in by hand. For best results, serve immediately with tortilla chips or tortillas! Delicious!
